Adobo, the most Filipino dish

The recipe is simple but amazingly flavorful. Each family does it a little differently. This is our family recipe:

Ingredients

  • 2 pounds chicken thighs

  • 1.5 lb pork belly (trim off skin) or pork butt

  • 3/4 cup low sodium soy sauce

  • 12 cloves garlic, smashed

  • 1/4 cup water

  • ¼ cooking oil

  • 10 pieces fresh or dried bay leaves

  • a handful of whole peppercorns crushed (10 peppercorns)

  • 3/4 cup filipino cane vinegar / apple cider vinegar

Preparation

  1. Marinate meat in soy and 1/4 cp vinegar. Do not add the garlic yet, the pieces will just burn when browning the meat.

  2. Heat the oil in a large pressure cooker pan on medium heat.

  3. When the oil is hot, place the pork belly cubes on the pan and brown all sides, about 2 minutes per side. Then brown the chicken. You might have to work in batches for this, as you do not want to over crowd your pan. Set aside browned meat.

  4. Pour in the marinade of soy sauce and garlic into the pan. Add the water and bring to a boil.

  5. Add the bay leaves and whole peppercorns. Add the meat back and simmer . Put the lid on the pressure cooker and cook for 15 min. Let it naturally release.

  6. Remove lid and stir in vinegar and shake the pan around to disperse it. Simmer for another 10 minutes, or until tender.

  7. Serve hot.
